Of course, “Shark Tank” hit chef Cousins ​​Maine Lobster is known for its delicious Maine lobster rolls served New York or Connecticut style, but the trucks that travel around Virginia offer a much broader selection of lobsters. I was craving lobster this summer and recently tracked down Cousins ​​at Väsen Brewing Company to sample a wider selection of the menu.

Cousins ​​Maine Lobster’s Lobster Tots feature perfectly fried classic tater tots topped with warm Maine lobster, cilantro-lime sauce, and pico de gallo.

And my surprise favorite was Lobster Tots ($20). The shareable side dish starts simply with classic tater tots seared to perfection. These are topped with a warm Maine lobster, cilantro-lime sauce, and pico de gallo.

What stood out here was that the little ones were cooked long enough to retain their structure, creating a crispy, crunchy base. Then there was a generous portion of Maine lobster – split between three people, we were all happy with the ratio of shellfish to starch.

Then the creamy cilantro-lime sauce added citrus and tang without overpowering the lobster or weighing the dish down. And the dash of pico added a little more flavor, plus the ever-important vegetable note to justify a decadent dish like this. It’s a fun, easy, and not too crazy expensive way to enjoy the good lobster life this summer.
